The Coalition Against Nitrites is a non-profit organisation dedicated to eliminating cancer-causing nitrites from processed meats—a change that could help reduce the risk of colorectal cancer.

For decades, the global meat industry has used nitrites to enhance the flavour, colour and shelf life of bacon, ham, and sausages. However, a strong scientific consensus confirms that when nitrite-cured meats are cooked and consumed, they produce carcinogenic nitrosamines in the stomach.

With new technologies now available to produce processed meats without nitrites—while maintaining the same taste, appearance, and cost—there is no justification for their continued use.

Our coalition brings together scientists, medical professionals, policymakers, and third-sector leaders, including former government and World Health Organisation (WHO) experts, as well as political figures from across the spectrum. Together, we are committed to ending the use of nitrites in processed meats for the sake of public health.
